Terrific Truffle, Miso and Parmesan dressing

Wow, this is a bomb of flavour. I remember I first had this salad (kind of) at Nobu (a Asian future restaurant chain) in Singapore. And because of this salad I searched for Nobu restaurants wherever I travelled in world after this.

And off course I immediately tried to make my own interpretation of it, which always is a huge success at my dinners.

Try it, serve it and impress every single one you serve this delicious salad.




Ingredients:

  • 400 g spinach salad

  • 1 tbsp truffle oil

  • 1/2 - 1 dl extra virgin olive oil

  • 2 tbsp red miso paste

  • 1 lime, juice

  • 4 tbsp grated parmesan cheese, save some for garnishing

  • fresh or dried truffle to top the salad

Method:

  1. Mix all the ingredients together. But save the parmesan to the last

  2. Dress the salad and top with truffle and more parmesan
